What’s for Dinner?


 

Are you in search of simple, quick, mouthwatering weeknight dinner ideas? It’s time to try this simple shrimp alfredo recipe from SeaPak. It’s a fast, delicious, crowd-pleasing recipe that you can throw together from freezer to table in less than 30 minutes. No overthinking, no extensive prepping, and no significant cooking skills are required. It’s just a tasty dinner that you can feel good about. 

Here’s what you’ll need:

  • SeaPak® Popcorn Shrimp, 12 oz package
  • 2 cups fresh/1 lb frozen broccoli florets
  • 1/2 lb uncooked fettuccine noodles
  • 4 oz cream cheese, cut into pieces
  • 1/4 cup grated Parmesan 
  • 3/4 cup milk – 1%, 2%, or whole
  • 1/4 cup butter
  • 1/4 tsp salt

Cooking instructions:

  • Cook the shrimp according to package instruction using your preferred method.
  • While the shrimp is cooking, heat a large pot of water and cook the pasta. If you’re using fresh broccoli, add it to the pot during the last 2 minutes of pasta cook time.
  • If you’re using frozen broccoli, cook it according to the package instructions.
  • In a saucepan, combine the remaining ingredients to form a creamy alfredo sauce. Use low heat to melt the cheese and mix well.
  • Drain the pasta and return it to the pot. Add the sauce to the cooked pasta and mix carefully to coat the pasta evenly. Toss in the cooked broccoli and shrimp and serve immediately. 

Variations:

While we love this recipe just as it is, once you’ve mastered it, you might consider shaking things up a bit with variations of your own. Consider the following ideas to get you started:

  • Substitute plain shrimp. While we love the extra texture that the breaded popcorn shrimp brings to this dish, it’s also delicious with plain shrimp. You can toss frozen shrimp into the pasta water during the last 5 minutes of cooking. This poaching method results in tender, succulent shrimp every time.
  • Spice it up. Experiment with your favorite flavors. Maybe you’d like to add a bit of Italian seasoning to the sauce or some heat with a dash of cayenne. Be creative.
  • Keep things separate. Some picky kids prefer their food separate. That’s no trouble at all with this recipe. Prepare the pasta and sauce as directed. Serve the pasta, broccoli, and shrimp side by side rather than tossed together. You might even use SeaPak’s Sea Pals in place of the popcorn shrimp to add an element of fun. 
  • Use different veggies. Broccoli is tasty and healthy, but it’s not the only veggie that works in the recipe. Asparagus is delicious and can be substituted into the recipe easily. Use what you like.
